Dry Cider   6.5% ABV
This is a crystal clear dry cider with a stone fruit aroma, balanced sharpness and a clean, dry finish. Made with a blend of Washington culinary apples.

Elderberry Cider   6.2% ABV
This ruby red, semi-dry cider was made with regional Elderberries and a blend of traditional dessert and cider apples. The tartness of the Elderberry is balanced with sweet Washington apples giving us a subtle sharpness, delicate mouthfeel and a semi-dry finish. Aromas of fresh berry can be found on the nose. Packed with fiber, Vitamin A, B and C the Elderberry fruit has been used for generations as an antioxidant, anti-inflammatory, pain reliever, digestive aid and immune system booster. Drink and be well.

Pineapple Cider   6.4% ABV
There are certain fruits that pair so harmoniously with Cider and one of those is pineapple. With an abundance of sugars, acids, flavor and aromas, pineapple is a perfect fruit to blend with our dry cider blend to add a touch of tropical flavor and aroma to compliment the natural apple characteristics found in our ciders. We added one pound of Costa Rica pineapple to every gallon of cider that was made with fresh, Washington apples to give the cider a subtle pineapple flavor/aroma with out sacrificing the delicate flavors of the apples.

Raspberry Cider   6.0% ABV
The flavor is crisp, refreshing and finishes dry. A touch of Raspberry sweetness gives this cider a full mouthfeel, balanced with mild acidity.

Blood Orange Cider   6.4% ABV
We blended Blood Oranges with a base combination of Washington Pink Lady, Gala, Fuji and Granny Smith apples to create a cider that is more floral and tart than your average cider. Along with their lovely red color, blood oranges tend to have a noticeable and delicious raspberry edge to their flavor. This one is sure to check some boxes for the tart and dry cider lover.

Rosé Cider   6.9% ABV
This limited release annual cider is made using Mountain Rose apples from Bellewood Farms in Lynden. The Mountain Rose apple is naturally red fleshed, giving the finished cider a beautiful pinkish Rosé color. Flavors of tart apple, cranberry and rhubarb are present with a sweet baked apple aroma and a dry finish. This cider only come around once a year so try some while it lasts!

Pineapple Habanero Cider   6.4% ABV
We have combined our classic Pineapple Cider with spicy and delicious Habanero peppers. This instant classic is sure to please those looking for a perfect blend of tropical fruit & spice!

Equinox Dry Cider   6.9% ABV
The Equinox Dry Cider is named in honor of the Autumn Equinox, when night and day are approximately equal length all over the earth. It is also the approximate time that this trio of Gravenstein, Kingston Black and Yarlington Mill apples were harvested to make up this delicious and fresh bittersharp cider.
At first glance you’ll notice its pale gold to dark straw color, and as you raise it to our nose you’ll enjoy the aroma of ripe apples, burnt sugar and slightly spicy hints of clove. In the mouth, this perfect cider blend is due to the trinity of sugars, tannins and citrus like acidity. The medium to high carbonation flows through into the mouth and ends with an almost Champagne like finish. The finish is dry and quite clean and aromatic with a sweet-acid flavor.

Yuzu & Mandarin Cider   6.5% ABV
Made for and in collaboration with Redlight Kitchen & Bar (opening its new location soon on Grant St. in Bellingham), we introduce our latest creation, the semi-dry Yuzu & Mandarin Cider. With its delicate mixed fruity and sour taste, flavor hints of grapefruit, mandarin and lime, Yuzu is complimented perfectly by the juiciness and strong citrus aroma of the Mandarin.

Cider Infusion Program

The Lost Giants Cider Infusion Program was created for the purpose of research and development so that we can have a way of experimenting with the blending of natural fruits, vegetables, flavors and spices with our ciders. We desire to push the boundaries with what is possible with regards to flavor combinations and the harmonious balance they have with apple cider. We believe that if you add other flavors to cider, those additional ingredients should compliment the delicate, natural flavors found in cider rather than overtake or mask them.

When we release a new infused cider it typically highlights the fruits and vegetables that are ripe and ready for harvest at that particular time in Northwest Washington. So how do we choose what to infuse with? Typically we will get together as a team and evaluate what fruit(s) or vegetable(s) that are readily available to acquire locally. If the fruit or vegetable can be harvested by us, we definitely take advantage of that opportunity! Once we decide on what ingredient we want to use for that week, we then decide what style of cider to use for that particular infusion. Some ingredients are better suited with a sweeter cider and some are better balanced with a dryer cider. We are now on our 20th infusion and so far we have been very excited at the results. So far we used 4 different species of locally harvested Blackberries as well as Raspberries, Strawberries, Blueberries, Salmon Berries, Cranberries, Peaches, Plumbs, Rhubarb, Mango, Pineapple, Cucumber, Jalapenos, Hops and Lavender just to name a few.

How does it work? We built a custom designed infuser that is capable of holding about 5 gallons of volume. We cut and prepare our fruit or other ingredients and fill up our infuser. Then we attach the infuser to a keg in our cooler behind the bar. We pull cider from a keg, it mixes with the contents of the infusing container and then comes out of the faucet in the tasting room. Pretty simple really!

When we find a combination of ingredients and cider that we all love and that our customers love we then find ways to use those combinations on a larger scale. Everyone really enjoyed our Cucumber and Jalapeño infusion so we decided to scale that one up and we made a large batch of that cider using those two ingredients. Also, we did the same thing with Pineapple and that one has become one of our most popular styles in our tasting room.
